When someone who knows the lingo associated with espresso machines hears the term “dual boiler” their senses go on alert. They know that machines having 2 boilers, one for steaming, and one for brewing are serious machines usually in the pro-sumer or commercial category. A semi-automatic espresso machine like this Breville BES900XL Dual Boiler for home use is not a common breed. At the heart of this machine is its dual stainless steel boiler heating system. The brew boiler, for the espresso shot, extracts to within 1°C and a separate steam boiler, which offers instant and powerful steam on demand for heating and frothing milk for perfect lattes and cappuccinos is always ready. Breville further enhanced their design by having another heating element in the brew head to keep it at constant temperature thus ensuring that there are no thermal shocks during the infusion and brewing process. Brew temperature control - Maintaining temperature in all phases of the brewing process is critical for making good espresso. The Breville BES900XL Dual Boiler accomplishes this with 3 critical sensor controls that are user programmable to achieve optimal espresso flavor. The brewing boiler heater and the brew-group head heating element have independent PID, (proportional–integral–derivative), controllers. The steam boiler has a thermister temperature controller. The Breville engineers didn’t cut any corners designing the critical heating and temperature control systems. The result: great espresso and rapid recovery to enable producing drinks one after the other with consistent results.
Pre-infusion - Making great espresso requires wetting the grounds for a few seconds to allow them to absorb the hot water and expand while releasing essential aromas just before inducing high pressure hot water through the compressed grinds for the extraction of your espresso shot. Baristas know this process as pre-infusion and they take great care to do it properly. The Breville BES900XL does it for you automatically, gradually increasing water pressure to gently expand the grinds for an even extraction.
Water pressure - A known technical fact about making a shot of espresso is delivering hot water through a charge of compressed coffee grounds at an optimum pressure, (7 to 9 bars), to force the water through the grounds at a precise speed while extracting the maximum flavor from the grinds and producing a velvety hazel colored créma floating on top of the shot. The design of the Breville BES900XL includes 2 pressure pumps to maintain pressure in 2 systems. One is a 15 bar Italian pump with over-pressure valve (OPV) protection that delivers water at the optimum maximum extraction pressure of 9 bars to the brew-group. The other one is a 3 bar pump exclusively used to feed the steam boiler. That means no pressure drops in the brew-group when the auto-fill function calls for more water for the heat exchanger boiler while you are pulling a shot.
Frothing wand - The steam wand has full range of motion, left to right, front to back, and even swivels. The movement has enough friction drag to require a little effort but moves smoothly and provides satisfying feedback for precise positioning. The soft rubberized grip keeps you from burning your hands while operating. The end of the wand features a bulbous three-hole tip that helps you to produce creamy milk foam. Included with the Breville BES900XL is a multi-tool for cleaning the wand or even unscrewing the tip so you can give it a complete cleaning.
Steam - Being a dual boiler machine, the BES900XL has on demand steam, and possibly the best steam control system in its class. It even rivals many commercial systems. Steam power is excellent for building perfect micro-foam time after time. The dedicated 32 oz steam boiler and 3 bar pump, delivers instant and continuous steam.
Programmable temperature - The Breville BES900XL Dual Boiler has PID-controlled temperature for both the brewing boiler and the brew-group head's active heating system. That means if you want to have 94C temperatures, you get that, or at least very close. More importantly, the temperatures hold very steady once they get to your programmed setting. The settings are in 1C or 2F jumps.
Water reservoir - The 84 oz, reservoir can be removed from the back of the machine through a lift and pull out handle system built into its base. Removing it is simple to allow refilling the reservoir with fresh water or replacing the integrated filter.
Usually getting to a water reservoir to refill it at the back of a heavy machine would involve wrestling the machine out of position on the counter with both arms wrapped around it while trying to lift and scoot it around to get to the back. Not so with the BES900XL. There are 2 ways to refill the BES900XL.
First, there is a soft-touch, damped release lid in front of the cup tray that once pressed, slowly raises revealing the water fill opening. A clever LED lighting diode enables you to see the water level as you fill through a sighting area under the grouphead. Any overfill drains into the drip tray.
The second way, (and this is very clever), is to remove the machine's drip tray, where you'll see a big knob underneath it. Turn it from 12 o'clock to 6 o'clock and the front of the machine raises up slightly setting the machine on three rubberized roller wheels! The front wheel swivels 360 ° allowing you to just gently push and steer the machine around on your counter with one hand! Wow!
Hot water - The hot water dispenser on the left of the Breville BES900XL has a micro-switch that communicates with the main CPU about its status. Water comes from the brewing boiler, and because the brew boiler is given 80C water via the steam boilers heat exchanger, there's little chance of excessive temperature drops even when dispensing 150ml or more of hot water.
Drip tray - The drip tray has a feature that is a clear visual indicator of waste water level - a wide “empty me” sign slowly starts to pop up as the tray fills. The unique design of the covered tray has a large surface, approximately 13” x 5”, and it is designed with a shape called a spill area thqt helps you to pour out the waste water without spilling.
Cord storage - A cavity inside the back left of the machine provides space for the flat cord to roll up. The entire cord fits easily inside.
Accessories storage tray - By pulling out the drip tray a small accessories storage tray is released revealing space to store spare filters, tools, cleaning tablets, and more.
