Gaggia has long been recognized for its ability to consistently provide reliable, high quality espresso machines. When they introduced the Evolution, they not only kept up with those standards, but also far exceeded them.
The Evolution is an aesthetically pleasing machine with a streamlined look that accommodates any kitchen counter. The charm, however, comes from within. The Evolution offers a high wattage boiler that has one of the quickest heat up times in the industry, complemented by a 55-watt pump that sits on vibration resistant rubber mounts. And with its commercial brew group and portafilter – which is approved for use with ESE certified coffee pods – the Gaggia Evolution packs a big punch into its tiny frame. To top of your espresso, Gaggia has also included their Turbo-Frother frothing wand to make sure you produce fantastic froth for every cappuccino.
Easy to maintain, the Evolution was also designed with removable parts for easy access. When the 44oz. capacity reservoir runs low, simply slide it out from the left side of the machine to refill it at the tap. The drip tray is can also be removed for simple disposal of waste water.
Heated Cup Stacking Surface - The Gaggia Evolution has a heated cup stacking service that allows you to preheat your cups before serving your beverages. Warm cups are desired in making perfect espresso because you are dealing with very small volumes of liquid, which can be cooled off rapidly if poured into a cold cup.
Removable Drip Tray & Grid - The drip tray is made of durable plastic and removes for easy cleaning and the cup tray is made of polished stainless steel.
Instant Hot Water Dispensing - The machine delivers instant hot water just by turning the steam knob during normal standby (brewing) mode and activating the brew switch. Hot water will be dispensed from the steam wand. Use hot water to make tea, Americanos, hot chocolate, or other hot beverages.
Powerful Pump System - The 15 bar, self-priming, vibratory pump will provide more than enough pressure to make excellent espresso topped with thick crema.
High Performance Boiler - The machine features a high performance 1425-watt boiler that holds 3.5 ounces of water. While a small amount, the high performance of the boiler system allows for extremely fast heat up and recovery times by the machine.
Safety System Built In - The boiler heating element features a thermal fuse that provides burnout protection if the boiler is operated dry or runs out of water.

Heavy Duty Portafilter and Filter Baskets - The machine features one of the heaviest portafilters in its class. Made of heavy marine grade brass, and covered with chrome plating, it helps maintain thermal stability in your drink preparation, which gives you the best espresso possible. The Evolution has commercial-standard 58mm filter baskets (one double shot filter basket, and one single shot filter basket that also accommodates ESE pods) that are made of stainless steel.
Removable Water Reservoir - The 44-ounce water reservoir is removable for cleaning and is made of shatter resistant ABS plastic. The water volume is easily seen from the front and sides of the machine, so you’ll always know how much water you have.
Simple To Use Controls - The Evolution features three push buttons that control the main functions of the machine. The button farthest to the left turns the machine on or off. When the machine is on, an indicator light to the right of this button will illuminate. In the center sits the brew button, and to the far right is the steam button. Whenever the boiler is heating (when you turn the machine on, or are heating the machine to steam temperature, for example) an indicator light between the brewing and steaming buttons will illuminate. To release steam from the steam wand, simply turn the knob on the right side of the machine.
