This model is equipped with a quiet, commercial-grade rotary pump, with external pressure controls that will allow you to adjust extraction rates to suit your preferences.

Standard Rocket Espresso features, such as the chrome-plated marine brass E-61 brew group, copper boiler, and commercial-grade Sirai pressure stat make the Giotto Evoluzione one well equipped machine. From top to bottom, this unit has been designed to ensure maximum heat stability for great tasting, aromatic espresso. The Rocket Espresso Giotto Evoluzione comes with a two-year limited warranty.

Boiler - The Giotto Evoluzione’s nickel-plated copper boiler has a brass endplate for maximum heat retention. It is built to resist scale build up and oxidization and features a 1200-watt heating element. Users can monitor boiler pressure using a gauge, located on the front panel of the machine.

Plumbable - This Rocket Espresso machine can be connected directly to a water line for your convenience. The unit has a control switch that lets users alternate between using water from the reservoir and plumbed water lines.

Pump - The Giotto Evoluzione has a quiet, professional quality rotary pump; an external pump pressure control lets users adjust the pump pressure to suit their needs. Pump pressure can be monitored using a gauge, mounted on the front panel of the machine.

Brewing - A nine-pound, chrome-plated brass E-61 brew group ensures maximum heat stability. To help you get the most flavor and aroma out of your coffee, the Giotto Evoluzione has a gentle pre-infusion cycle that saturates coffee grounds prior to extraction. A commercial portafilter, as well as single and double-shot filter baskets are included with the machine.

Thermosyphon System - Hot water flows from the boiler to the brew group, and back, thanks to the Giotto’s Thermosysphon System, which helps to ensure proper brewing temperatures.
